Abstract:Objective To evaluate the hygiene of kitchen utensils using the ATP bio-luminescence method, coliform paper method and total colony count method. Methods 350 kitchen utensils were chosen by cluster random sampling method, tested and evaluated with ATP bio-luminescence method and coliform paper method respectivity. Results A total of 350 pieces of tableware were detected by both methods. The relative light unit of sub plates , bowls ,chopsticks, deli knives, plates for cooked food and food boxes was 0~507,0~2942,4~4418,0~9999,4~9999 and0~1254 respectively. The qualified rate was 75.68%,85.14%,46.88%,47.73%,34.04% and 55.32% respectively according to the ATP method, but was 81.08%,82.43%,64.06%,52.27%,46.81% and 55.32% respectively according to the Coliform paper method. In evaluating the qualified rate of 6 types of tableware, the Kappa values between the ATP bioluminescence method and coliform paper method were 0.656,0.702,0.539,0.546,0.566 and0.602 respectively. Conclusion A reference value between these two methods should be stipulated as soon as possible
